Grilled Sweet Potato Fries

Ingredients
3 medium sweet potatoes
2 Tbs vegetable oil
1 tsp salt
1/2 tsp paprika
1/4 tsp chili powder
chopped fresh cilantro, for garnish
Directions
- Peel the sweet potatoes. Cut into large wedges. Bring a large pot of water to a boil. Parboil the potatoes for 5 minutes. Drain the potatoes, and pat them dry. Place on a baking sheet. Toss in the oil to coat. Heat a grill to high.
- Place the potatoes on the grill. Cook for 5 to 7 minutes, turning once. Time will vary depending on size of the wedges. Remove from the grill. Combine the salt, paprika and chili powder. Sprinkle over the potatoes.
- Garnish with cilantro. Serve with chipotle mayo or your favorite sauce.
